Delphine at the W Hollywood Hotel & Residences takes its inspiration from the casual eateries found along the European Riviera. After entering from Hollywood Boulevard or through the hip lobby, guests will encounter an oyster bar and long, bustling dining room with blue-and-white tiled floors and windows that look out on the courtyard near the Hollywood and Vine metro station. The outdoor bar there, Station Hollywood, offers original cocktails, ho-hum appetizers, and a giant retractable screen for film premieres. Executive chef Sascha Lyon is an alum of Gallic institutions Balthazar Restaurant and Pastis in New York, and his (paper) menu is similarly rooted in brasserie cuisine. Start with marinated olives, foie gras and chicken liver mousse, salt cod purée brandade, or---for those with ambitious appetites---one of the seafood platters. Entrée options range from traditional French fare like steak frites to house-made pizzas to Mediterranean seafood dishes such as arctic char garbure, which yields a satisfying crunch from its skin. Daily house specials include chicken tarragon, cassoulet and bouillabaisse. End your meal with the dark chocolate hazelnut cake with chocolate ice cream or crème brûlée. The wine list is all-purpose but not very comprehensive, as a greater emphasis has been placed on the cocktail program; the selection of beers includes a few drafts as well as bottles of Delirium Tremens and Saison Dupont.
