It's a little tricky finding Fuego, but it's worth the effort. A visit to the restaurant at Long Beach's Hotel Maya makes diners feel like they've arrived at their holiday destination in Mexico. The hotel had been completely remodeled, with vibrant and modern south-of-the-border colors and theme. Fuego offers a pleasant indoor dining room, but we recommend sitting on the large patio no matter the time of day or night. It's right on the water, with views of the Queen Mary and downtown Long Beach skyline. Chef Jesse Perez has mastered Latin cuisine. The menu is short but very tasty, featuring fresh seasonal ingredients. Start with the blue Agave cured salmon on a cilantro-Serrano spread. We preferred the lobster ceviche in coconut milk with aji chile over the Mexican shrimp ceviche. The lamb and coriander albondigas were nicely paired with poblano chimichurri, and, if you want to reconcile yourself with tamales, try Perez's trio. Entrées include wild salmon, nicely cooked and served in a mole verde broth; shrimp enhanced by tequila-lime essence; and lamb chops with agave-guajillo chile essence and black beans. As evidenced by these selections, Perez really sticks to his roots and does not mix produce that does not belong in Latin cuisine. Expect to find an extensive list of cocktails, as well as beers from around the world and a small wine selection.
