Tender Steak & Seafood Description:
Walking into the lounge of Tender immediately transports guests from the clamor of the casino floor. Plush leather couches and dark woods make each table feel intimate, like sitting in one's own living room. Walk further back and the bar opens up to the main dining room, where cozy booths around the perimeter offer a semi-private dining experience. Starters are tasting platters, such as the salmon ensemble of cold and hot smoked salmon, rillette and tartare, or Hawaiian yellowfin tuna prepared with a seared sesame crust, as a plum tartare and with a chili-infused soy sauce. Tender attempts to source most of its products locally as much as possible, such as the honey dates from Pahrump that accompany the artisanal cheese platters. The charcuterie plate is filled with game deli meats, such as antelope pastrami, from small batch producers. Steaks range from the 16-ounce dry-aged Niman Ranch bone-in rib-eye to a 14-ounce free-range veal porterhouse. Specialties include an American Kobe meatball stroganoff, rich with black truffle, foie gras and wild mushroom cream sauce. The wine list complements the meat-heavy menu. For dessert, don't miss Tender's version of Grandma's chocolate cake, a decadent layer cake covered in a ganache dome.
