Located at the site of the former Bay Club, Merriman's Kapalua offers sweeping ocean views of Kapalua Bay and Hawaii Regional cuisine made almost exclusively with local products. Dishes, overseen by executive chef Philip Wang, include organic Kaupakalua tomato and Kula onion salad; Big Island butterfish "misoyaki"; Maui cattle beef filet with sautéed ali'i mushrooms; and coconut crème brûlée.
