Traditional hibachi grill fare, prepared by a knife-wielding, egg-throwing, wise-cracking chef, covers all the bases: chicken, beef, shrimp and scallops or any combination thereof, and all served with crisp vegetables and well seasoned fried rice. Hibachi dinners include chicken broth soup and salad; portions are so generous, consider paying the nominal fee for a shared entrée. The real treasure at Fuji is the sushi and sashimi. Everything is freshly prepared or rolled by two sushi chefs, who service both grill diners and sushi bar patrons. Try the spicy beach roll (tuna, salmon and crab), the KDH roll (for Kill Devil Hills) and the classic spider roll. Fuji offers quick take-out as well; either call ahead or pop in to place your order and enjoy a bowl of edamame and a cold Sapporo while you wait.
