Big Shanty Smokehouse Description:
Chic Dillard has had his share of experience with upscale restaurants, and with his partner, Ronnie Shaeffer, a Master Plumber, the pair opened this whistle clean 'cue joint and began tearing it up 'cue-wise in the neighborhood. We enjoyed starting with a smoked salmon dip, an upscale touch that, while different, certainly is in the spirit. The ribs are the glory, though, with a nice fat-to-lean ratio and showing the pink smoke ring that verifies their having been cooked slowly over wood. The barbecue sandwich (choose pulled, our preference, or chopped) was good, too, its bun piled high with pre-sauced meat. Our only disappointment was the sausage, which, although homemade, was dry. We also suggest the sides, including the Brunswick stew.
