This Ginza restaurant serves what is arguably the best sushi in a town that takes its raw fish very seriously. Diners sit cafeteria-style around a wooden counter manned by four or five chefs. Each group is designated a chef who assembles the sushi, recommends drinks and even entertains with small talk when necessary. Meanwhile, the meal usually starts with a seaweed appetizer and sashimi before proceeding to the main event: eight or more different kinds of sushi served at a just-right room temperature so that neither heat nor cold interferes with the experience of freshness in any way. It's difficult to give recommendations on what to order as so much depends on the season, what Kyubey's suppliers have been able to source, and the freshest catch of the day. In fact, many regulars just ask for the daily specials or order the omakase. However, those who prefer to do the ordering themselves should not miss the chu-toro, a juicy piece of tuna flank; anago, sea eel brushed with salt and sweet sauce; or katsuo, bonito brushed with garlic and served with shiso (green perilla).
