This Fantasy Springs restaurant elegantly demonstrates how to design and run a three-meal-a-day eatery that will satisfy both resort- and casino-goers, and visitors and desert locals alike. Neatly shoe-horned into a two-story, wedge-shaped space off the resort's mezzanine, the sleek dining room offers, at dinner, a wide selection of Mediterranean-influenced dishes, with a lot of crowd pleasers and plenty of comfort food. A selection of bar food-style items to be "shared for the table," including Monterey Jack "lollipops" with chili pepper-tomato coulis, calamari with pesto aïoli, and fried chicken with wing sauce, is fun but a little heavy on the breading. The rest of the menu has something for everyone, providing no one wants anything too surprising. The dishes are classics, well prepared, sometimes with a spin: a chicken pot pie with a creamy cheddar braise, a nicely balanced pork "osso buco" with horseradish potatoes and an interesting vegetable plate that includes a wild mushroom soufflé and roasted vegetable risotto. The desserts, too, are familiar friends, sometimes with a facelift. Crème brûlée cheesecake and limoncello tarte both give a new look to old favorites.
