Mitch's Sushi Bar Description:
Do not be deterred by Mitch's location, the interior nor the brusque manner of the itamae (sushi master)---what matters here is that this tiny (13 seats) shop is the front to a facility that imports some of the finest and freshest seafood to the islands and the sushi master is revered in Hawaii. Actually, Hideo Matsui, the itamae, is only brusque if you commit a cardinal sin such as asking for anything with mayo or drench a delicate morsel of fish in soy sauce. If you are in doubt as to the optimal way to enjoy a particular offering, ask him. His apprentice will answer you as Matsui-san only speaks Japanese. The precision and grace of the finest sushi traditions are honored here---if you like spider rolls and the like, this is not the place for you. As in all sushi bars at this level, we recommend just asking for what the sushi master suggests. He knows what is best that day and there is no better way to appreciate the art of sushi. One thing always on the menu is fresh lobster---it is first served as sashimi on the shell after being dunked in a slurry of saké and ice and then reappears at the end of your meal in a bowl of savory miso soup. Another item not to miss is the wild New Zealand salmon which puts all others to shame with its buttery texture and rich, yet mild, flavor. Mitch's is BYOB. The last orders are taken at 7:30 p.m. but we recommend dropping by in the mid to late afternoon if you want to sit at the counter and watch a master at work.
