Fancy a fine dining adventure in a restaurant fronted by one of the most well known chefs in the world? Consider a reservation at one of Hong Kong's hottest tables, by celebrated chef Pierre Gagnaire. An intimate dining space with floor-to-ceiling windows framed by neutral-toned blinds with spectacular harbor views gets ambient lighting from hand-crafted crystal chandeliers. Pierre boasts a walk-in wine cellar which stocks more than 600 wine labels from premium vineyards of France, Italy, the U.S. and Australia. If the décor, view and wine list do not impress, then the customized porcelain, Christofle sterling silver cutlery and French cuisine might. The menu changes frequently to reflect the availability of seasonal ingredients, and these are mostly sourced from chef Gagnaire's network of small producers in France. Expect the entrées to be thematic and theatrical, as with the generous Les Langoustines done in five ways (soup, tartare, mousse, pan-fried and grilled). For mains, the chef showcases his savoir-faire with classical creations, including roast black pork from Bigorre with sage, butter, homemade fruit vinegar, onion cream, "pomme dauphine" (crisp potato puff), raisins and pistachio as well as rack of Allaiton lamb roasted with oregano, finished in herbed butter, courgettes cream with pearl onion, ewe's milk, olive oil ice cream and dried fruit. Leave room for a sweet creation, perhaps Le Julie of lemon cream with Malabar gum, strawberry marmalade and pink praline powder.
