Georgia's Bistro is the main dining space for this Ritz-Carlton property, located only an hour and a half from downtown Atlanta. Built in the manner of a mountain lodge, the facility enjoys an idyllic spot on the shores of manmade Lake Oconee. Executive chef Scott Gambone has re-positioned the restaurant's philosophy to focus on farm-to-table fine dining. Pursuit of local foodstuffs has led him to Benton's pork products from Tennessee and to the Riesling of Georgia's Persimmon Creek winery. Poaching a pear in the wine, he combined the morsel with some of Benton's "prosciutto," some greens and a thyme-fragrant cheesecake. Fennel pollen-dusted diver scallops paired with a corn-smoked bacon risotto and shaved apples is typical of the kind of culinary thinking this kitchen indulges. American lamb chops and shoulder with sweet pea agnolotti and a lavender honey jus are typical of the flavor melds now on Georgia's Bistro menu. The wine list seems a bit toned down from our previous visits, but the by-the-glass options have expanded in number. Breakfast can be an opulent affair with regional touches found in stone-ground grits and fish, a South Georgia classic. The restaurant's view of Lake Oconee makes it one of the state's most romantic dining rooms.
