A stone's throw from the vast beaches of the Landes, this former post house on the road to Santiago de Compostela offers a cuisine that draws on the seasonal flavours and aromas of the region: it features dishes like saumon de l'Adour, asperges des sables and foie gras de canard chaud aux raisins. It also boasts an impressive collection of Armagnacs.
If you want to discover the real cuisine of the Landes, pay a visit to the Coussau family's restaurant, located on the edge of the pine forest. The chef serves the best confit imaginable with pommes cocotte cooked in goose fat: a sinful experience! Equally tasty are the wood pieon with cèpes, and the fresh lamprey eel with leeks. If you really want to overindulge, try the country ham. Excellent Southwestern wines, not all of them as expensive as the Madiran or the Tursan.
