When you first walk into Cabo, you might think you are in a diner. But look again... you are in an upscale Mexican seafood shack that claims to serve "Mix-Mex" cuisine.
Boisterous, loud and packed at peak hours, Cabo is a great place to meet for a margarita before heading out to explore Sundance Square. Cabo serves standard Tex-Mex fare with fajitas, enchiladas and tacos dominating the menu. There are a few surprises here and there, like the creamy corn and hot pepper soup, a lush, fiery concoction that can easily make a meal, especially if you've just downed a basket of chips and salsa, and the fried plantains served with a zesty black bean salsa.
