Power, money and fine dining converge into a single space inside the Mandarin Oriental's CityZen. Service rules, with a staff that cares about the correct placement of cutlery, the presentation of courses, and the speed with which all of this is carried out. The menu comes in three parts: a regular six-course tasting menu, a six-course vegetarian tasting menu, and the prix-fixe three-course dinner menu. Another option for something a little more off-the-cuff: a bar tasting menu. Executive chef Eric Ziebold's signature dishes may include confit of moulard duck foie gras with cranberry stew and star anise scented pain perdu or pan-roasted calotte of Prime Midwestern beef, russet potato dariole, chanterelles and red wine sauce. Other options: cardoon gratin, escalope of cured New Zealand sea trout, and Elysian Fields Farm lamb rib-eye and crispy flank with toasted farro and baby turnips. The caramelized chestnut soufflé with Valrhona chocolate ganache and gianduja ice cream is just one of many stellar works in pastry chef Amanda Cook's line-up. Look to sommelier Andy Myers for wine selection. His intense passion and easy spirit reject elitism. As it turns out, the dinner hour picks up at the socially chic hour of 10 p.m., when CityZen really begins to buzz.
