Tamayo Description:
Tamayo is located in one of the city's oldest buildings. It is named after famed Mexican artist Rufino Tamayo and is decorated with large mosaic murals inspired by his work. But the real artistry comes from chef Richard Sandoval's kitchen. Sandoval grew up in his family's restaurants in Acapulco and, after graduating from the Culinary Institute of America, he was determined to open a Mexican restaurant that went beyond burritos. For starters, we like the chile relleno, a roasted poblano pepper stuffed with shrimp, scallops, calamari and cheese served over a black bean purée. Pork tenderloin marinated in tamarind vinaigrette with a pumpkin seed sauce makes for a pleasant melding of unusual flavors. A dish with lots of punch for vegetarians is the champinones envueltos, a strudel of wild mushrooms adobados served on a bed of zesty sweet potato purée. Tamayo has a nice wine list but an even more impressive selection of more than 100 tequilas. Request a table on the rooftop patio to enjoy a sweeping panorama of the Rocky Mountains with your dinner. Service is brisk but helpful and good suggestions are offered about pairing dishes with the specialty tequila drinks.
