Pulsating with lively neighborhood crowds, this restaurant in the up-and-coming Stapleton area is a siren song to trendy couples, young families and anyone who has an affinity for bacon, a mainstay on the playful American menu. The dimly lit space, flanked by flickering candlelight, flat screen TVs, dark woods and a charcuterie station boasting an old-fashioned meat slicer direct from Italy, is unpretentious and irreverent, much like executive chef Woodie Thomas's dishes, that while artfully crafted never take themselves too seriously. Where else, for example, will you find a bacon, caramelized banana and chunky peanut butter sandwich stacked between two slices of Hawaiian bread? We like the quirky combination as much as the bacon-topped Kobe beef sliders and duck confit, sided with apple butter cornbread and a smoky heirloom bean cassoulet. Our favorite dish, however, may be the pork belly, two fatty slabs of the prime part of the pig bolstered by sides of creamed spinach and an earthy grit cake. For a fitting finale, order the gold-dusted truffles pelted with flecks of bacon. Pigging out has never tasted so good.
