Traditional Vietnamese and Japanese food, with only the slightest bit of New Age tweaking and made with topnotch ingredients, is far better than the stylish setting might portend. Steel really is all about the food: sushi, build your own tempura or seafood platters, fire-pot soups and plenty of land options and vegetarian dishes. For starters, don't miss the Vietnamese beef carpaccio (bo tai chanh). Not quite raw, the chopped, slightly seared beef is cured with lime, mint and a touch of rau om, a fragrant Vietnamese herb, and served with a ginger sauce. The whole fried fish (ca chien), striped bass wok-fried and served with a ginger sauce, is always first-rate. It's not hard to run up a $100 sushi tab, so pay attention to what you're ordering, especially after a few rounds from the good selection of sakés. The line for free sushi during happy hour on Wednesday nights stretches out the door.
