There is often a wait, but once you're seated, you'll be surprised by how quickly the polite, attentive servers deliver intricate dishes from the kitchen and sushi bar. Start with the creamy toro tartare touched with mango and topped with crunchy caviar, then awaken your taste buds with the yellowtail jalapeño---slivers of raw fish and peppers mix beautifully with a citrusy ponzu. We also can't resist the Angry Dragon Roll, filled with shrimp tempura and sliced papaya, then topped with crab salad. If you're feeling less adventurous, we recommend Florida Meets Japan---pan-fried gulf shrimp and spinach in a miso cream; the pan-seared tuna with saké soy butter and even the teriyaki also please. In short, even if culinary theatrics aren't your thing, you'll find something at Ginza you can applaud.
