Connoisseurs of Carolina barbecue revere Allen & Sons for its commitment to tradition. In an age when most barbecue joints have switched to high-tech gas and electric smokers, this institution still does it the old-fashioned way. The Allens' method represents the best of "Lexington style" North Carolina barbecue---pork shoulder slowly smoked over seasoned hickory, then coarsely chopped and punctuated with a peppery vinegar-based sauce with a touch of tomato. You can order your barbecue as a sandwich or as a plate with hushpuppies, slaw and your choice of home-cooked vegetables (the fried okra is first-rate). Homemade old-fashioned pies---pecan, coconut chess and chocolate meringue---also are noteworthy. But make no mistake, the main reason most folks drive to this unassuming cinderblock shack, unchanged for decades, is for some of the best barbecue in the state.
