A native of Vietnam, chef-owner Michael Chuong wound up in New Orleans where he learned the flavors of the Creole kitchens of his adopted city. Blending those influences with the Vietnamese-Chinese family cooking he savored at home gave him a unique gastronomic perspective. This distinctive American cultural background has resulted in a very personal cuisine. Lured away from one of the best dining establishments in the Big Easy, Chuong opened his restaurant in Cary. Here you may enjoy the freshest sushi at the bar, or Chuong's East-West interpretations of cassoulet and osso buco; entrées such as sea bass with crisp pork belly, shiitake mushrooms and soy-meunière sauce; or taro crab cakes with edamame, napa cabbage and wasabi rémoulade. Presentation plays an equal role with flavor at An. The restaurant's signature appetizer is an assortment of several Asian classics from sushi to spring rolls with a startling garnish, a bowl containing a live goldfish. Such whimsical touches, including the cocktail waitresses' eye-catching uniforms, make for a delightful Triangle dining experience. An's wine list is extensive and reflects Chuong's penchant for big California and French Cabernets.
