BlueFire Grill, La Costa Resort & Spa's hip dinner venue, sits in the middle of the resort's relaxing Mediterranean courtyard. Outside, a casual patio with fountains, fire pits and live entertainment on weekends beckons. Inside, the earthy modern design with blue-colored glass accents, dark wood floors, a timber ceiling and rich leathers in dark oranges is a study in good taste. The BlueFire Lounge calls for a sophisticated cocktail and an artisanal cheese plate. Chef Gina Rodriguez, with her classical French background, creates a playful New American menu with Italian and Spanish influences and a splash of the South. Tender scallops bring detente to the dueling flavors of a sweet-and-sour sauce; a roasted piquillo pepper boasts shrimp, scallops and ricotta cheese in a lobster velouté; spicy shrimp cakes call for porcini vinaigrette. A blood orange gastrique enlivens her Muscovy duck. The pan-seared Australian barramundi bears a rich cloak of saffron shellfish cream and smoked paprika oil. Resort pastry chef Jaimie Hileman serves elegant conclusions like a double chocolate brownies with basil white cream, persimmon crème brûlée, or a passion fruit trifle with mango cake and coconut cream, deemed "vacation in a glass."
