The dish is a staple of South Africa's Cape Malay cuisine, which blends together culinary influences from Malaysia, India and other southeast Asian counties. Here, diners choose the meat (mutton, chicken, venison, beef or goat), toppings and sauces from a board above the counter to create combinations like gnu served with a turmeric and masala spiced sauce.
