This tiny bistro in Cambridge's largely residential Huron Village neighborhood showcases New American food with an emphasis on local and sustainability-minded purveyors. Chef-owner Tim Wiechmann blends French technique, a strong creative streak, and a globe-trotting eclecticism; his wife Bronwyn is a warmly hospitable presence, always at the entrance to welcome new guests and regulars. The high-ceilinged space is airy and the tables closely spaced, yielding a Spartan bistro ambience that belies the luxuriousness of the food. Cunning amuse-bouches like a thumb-size Maine lobster salad sandwich are a preface to the locavore riches to come, like a Duxbury oyster shooter submerged in a shot glass of cold beet broth. Among the creative compositions is a boudin blanc appetizer dotted with morels and dandelion greens, and tuna loin on puff pastry with a fondant of fennel, lemon and pink peppercorn. This edgy, artisanal, modern bistro provides an education in the joys of Slow Food with an epicurean payoff.
