Who would have thought that the "most French" restaurant in Los Angeles would be located in downtown Culver City? Bruno and Florence Herve-Commereuc, who brought us Angélique Café, have resurfaced here with a brasserie, complete with long red banquette, brass railings, white linen tablecloths topped with white paper, and a lively ambience created by Bruno but fostered by the customers. Bruno, from Normandy, started working in restaurants at 13 and then obtained the highest degree in charcuterie before moving to America. As expected, he prepares all the terrines and sausages during the day. The cuisine is earthy, simple and very French with no California influence. You may start with museau (head cheese), a Lyonnais sausage on a warm lentil salad, a traditional soupe à l'onion, French foie gras terrine, or herring fillets served with their traditional fingerling potato salad. The menu also includes escargots, crunchy and tasty pied de cochon (pig's feet) and merguez. The boudin noir (blood sausage) is the best we've had in a long time. We also liked the guinea fowl stuffed with foie gras on a bed of seared cabbage in a Cognac sauce. Mussels in white wine sauce, seared salmon with sorrel cream, and lemon grass pike quenelles are for fish fans, while vegetarians will enjoy pappardelle with garlic confit. Finish your culinary French voyage with a thin-crusted tarte Tatin or île flottante. The wine list emphasizes French wines, complemented by some domestic bottles.
