Chef de cuisine Richard Hoffman prepares Mediterranean cuisine that showcases local ingredients. Dishes include chilled tomato gazpacho with local blue crab, organic mushroom risotto with veal sweetbreads, crispy branzino with saffron couscous, and grass-fed filet of beef with artichoke mousseline. Desserts include basil-scented strawberries, chocolate-espresso budino and orange crespelle.
