Some of these dishes are intriguing, but first-timers shouldn't bypass okonomiyaki. Batter-bolsterers include mushrooms and spicy shrimp, plus the more daring beef tendon and squid leg. Try the Modern Mix, combining mixed seafood and pork. Don't let the tabletop griddle go to waste. Cook it yourself: it's more fun, and elevates your visit from meal to experience. And they don't leave you on your own; laminated instructions guide each step. After cooking the okonomiyaki, top it with semi-sweet red soy sauce, mayonnaise, seaweed or dried fish flakes.
