You don't have to be a student to get a taste of the Culinary Institute of America's West Coast outpost. The Wine Spectator Greystone Restaurant literally puts you into the kitchen and in front of the stoves in its watch-while-you-eat dining hall. Within the school's imposing stone facade, bright-hued appliances and metal food art inspire chef wishes and culinary dreams. Don't be shy---loiter by the various island stations as they turn out seasonal dishes that show off a well-stocked pantry. To start, morels and asparagus float on phyllo while sweetbreads jump ship into garlic cream. Or, opt for a tiered lazy Susan with five different bites that may include Thai shrimp on cucs or demitasses of potato leek soup with truffle oil. Mains like duck with fava bean ravioli in delicate curry intrigue. Even better: lamb with vibrant gremolata and butter bean-sausage ragoût. A feather-light crème cloud dusted with meringue makes a grand finale. Terrace seating overlooking vineyards plus a notable wine list befit the historic Christian Brothers property.
