Chef Michael Knowles, a Wolfgang Puck disciple who comes from Spago in Las Vegas, brings thoughtful California cuisine to Delicias, inspired by the farm-to-table approach. The menu celebrates seasonal ingredients, especially appropriate when Chino Farms is literally in the restaurant's backyard. Yellow-tomato soup with a hint of curry makes for a lovely amuse-bouche, while a Chino Farms chopped salad is a medley of vegetables nestled on butter lettuce, spritzed with a light sherry vinaigrette. Creamy risotto with shaved black truffles from Perigord is an earthy delight, while delicate Kona kampachi with Blanco grapefruit and tangerine enlivens the palate with a welcomed swell of citrus. Knowles's talent unfolds beautifully with his duo of Woodland Farms duck over spinach spätzle, paired with a Laetitia Pinot Noir; the frontal berry and earthy notes of the wine play off the subtle gamey flavors. Advanced sommelier and general manager Gene "Gino" Campbell has implemented an electronic wine list, so diners can review the wines extensively with added bonuses like chef notes on specific bottles and suggested food pairings. Desserts include a pineapple upside-down cake, Sacher torte with orange jam, and a dulce de leche brownie with honey ganache, caramel mousse and crème anglaise. Sunday is family night, and features pastas and pizzas appealing to the kids, while Thursday honors the art of fine burgers, occasionally with live music.
