An oceanfront fixture, this restaurant in Hotel Laguna features eclectic Pacific Rim fusion cuisine. For the pleasure of hotel guests and passersby alike, Claes serves a daily breakfast buffet as well as à la carte offerings such as traditional eggs Benedict or the more offbeat Alaskan halibut with chili-glazed asparagus tips and a potato griddle cake. Lunch consists of fresh salads, sandwiches and an assortment of entrées, while dinner on Friday and Saturday nights has a "creation of the moment" menu, prepared by chef-proprietor Claes Andersen. Start with the roasted tomato soup, which comes with a sweet crab beignet and yuza-ginger froth. For the salad course, order Claes signature salad with tender baby lettuce, cucumber, tomato, taro chips and a sherry vinaigrette dressing. Choose from dinner dishes such as tataki-style tuna with yuzu crème fraîche, micro lettuce, asparagus gelée and dried miso or the gilled lamb "lolli-chop," served with Asian vegetable slaw and black bean demi. More than 200 wines are available, and you can make your selection with help from chef Andersen himself, who also serves as sommelier.
