bluEmber Description:
The signature restaurant of the lavishly reappointed Rancho Las Palmas Resort & Spa, bluEmber takes a Southern California contemporary approach to its menu, with a little something for everyone and nothing pushed too far. Mediterranean, Mexican, Asian and Hawaiian touches add spin to the fundamentally American approach, sometimes with very happy results. Particular successes are such appetizers as the lobster, shrimp and local sweet-corn cakes, or the chipotle chicken and potato empanada. Entrées include a pleasantly spicy achiote rack of lamb with avocado and cilantro salsa and sautéed chayote squash, slow braised osso buco-style beef short ribs, scallops nicely matched with wild mushroom risotto, and a vegetarian dish of wok-fired sesame udon noodles.
