Matisse must be one of the few real French experience restaurants in Vancouver or at least on the Island. From the moment you walk into Matisse, you'll feel the air of France surround you. I've been here about 6 times and have yet to be disappointed. You're greeted warmly at the door, usually seated quickly and the staff is extremely knowledgeable. The only minor complaint is that they could stand to expand on their wine list, but the few choices they do offer are excellent. They offer 5 and 7 course Parisian-style dinners but I usually opt for the Prix Fixe 4-course dinner that has never failed to amaze. The Foie Gras is something you should definitely try as well! Bon Appetite!
