The name says it all---the signature eatery of the Westin Boston Waterfront wants to appeal to your convivial spirit, as well as your fondness for condiments. However, given its out-of-the-way location, local patronage of the strikingly dark, dramatic dining room will be hard-won. Mind you, there's much to praise, as the concept is actually an intriguing one---when you pair a simply, properly cooked piece of meat or fish with your choice of a few sauces (there are twelve), you get, in a sense, a few meals in one; you can savor the multifacetedness of your steak or filet. However, there's also much to criticize, for while the sauces themselves tend to be quite good---the chimichurri, fig-infused demi-glace and morel-blue cheese fondue are especially zingy---a single, average slab of protein does not a thirty-dollar entrée make, especially when the appetizers they follow are far less successful (we're thinking in particular of the signature skewers, which arrive undercooked here, overcooked there and lukewarm all around). The dessert menu reveals the reverse problem: the fondue platter, in particular, is a cheeky, fruit-and-candy-laden delight, but the sauces tend to be off-texture.
