The steaks at John Howie include USDA Prime; American Wagyu, renowned for its buttery, mild fat; and pricey ($130) Japanese Wagyu (aka Kobe beef). Can't decide? Order the combo to compare. Mesquite creates a smoky flavor and light crust to keep in the juices. For sides, consider the creamed spinach or immense five-cheese stuffed potato.
