The signature goat saag (halal goat meat with stewed spinach, ginger and garlic) reflects the sophistication of centuries-old Indian cooking. Rich sides of okra masala and daal smoothed over with puréed tomatoes and cream will satisfy both meat-eaters and vegetarians.
