Rolling Bones Premium Pit BBQ Description:
Making a 'cue joint out of a 1940s-era garage that has been hammered into shape leaving it with a rather cramped kitchen is a labor of love. Barely troubled by the kitchen's size, Todd Richards bought this sizzling operation and made some changes. The meaty pork ribs are properly pink, evidence of their having been correctly---make that slowly---cooked over wood. The tender chicken is nicely done. The two sauce options (get it on the side) are very different from each other: we prefer the mild, with its robust cumin aromas and flavors to the hot, which seems like raw tomato with chili flakes for heat. The potato salad comes adorned with crumbled Benton's bacon (from Tennessee), which also appears in the BLT, and beans and Brunswick stew are first-rate. Smoked fish and lots of vegetarian options give Rolling Bones something for every taste. The best snack deal in town is the sliders, available in chicken, beef or pork (the best), for just $2 each.
