Nan takes Thai cooking to another level. The flavors are familiar, but the dishes are several notches above the norm. Check out the crispy, tender calamari, with just enough slightly hot-sweet sauce to keep it intriguing, but not mask the flavors. Dumplings come perched on a small piece of porcelain in a bit of sauce. An assortment of appetizers to share is the best way to take advantage of the kitchen's variety. Thai flavors anoint the sweet and fork-tender short ribs of beef with a silky massaman curry. Lamb chops, grilled pink as ordered, are paired with a delicate peanut-flecked green papaya salad---this salad has the authority to stand on its own, but the lump crab that supposedly accompanies it is so scarce, one can't justify any reference to it on the menu. We also like the dinner dish of chicken in a red curry with grape tomatoes, an ideal balance of flavors and textures. The wine list, somewhat upgraded since our first visit, remains well below the quality we'd like to see in a restaurant with this caliber food. Still, dining at Nan is an exotic experience, one worth repeating at frequent intervals.
