Malaysian cooking is one of Asia's most under-appreciated cuisines, and one of the least represented in Los Angeles. Its subtle flavors and complex spices---similar to those found in neighboring Indonesia---are derived from Indian, Chinese and Dutch influences, yet are unique. The whitewashed dining room in revitalized downtown Alhambra is lined with paper masks and travel posters. Gado-gado salad combines eggs, tofu and green beans in a luxurious peanut-tamarind dressing. Roti canai is pull-apart fried wheat bread, even better once dipped in curry. Rare-for-Los Angeles Hainanese chicken rice can be ordered poached or roasted, served with chili and minced ginger dipping sauces. Deep-red beef rending arrives in rich chunks, simmered with coconut milk, lemon grass and curry powder. Seafood dishes are highlighted by clay pot fish curry and zesty tofu sambal with shrimp.
