Exhibit A in the case for Albuquerque's fledgling restaurant renaissance: Jennifer James 101. Where so many chefs talk the local-seasonal talk, James, formerly of Graze, walks the walk, employing subtle techniques to showcase her streamlined aesthetic (likewise reflected by the sleek décor). The menu is short and deceptively simple, ranging from seeming comfort food so carefully presented it becomes a delicacy (braised Wagyu brisket au jus with black barley and griddled broccoli) to traditional delicacies re-imagined as comfort food (butter-poached lobster tail paired with, of all things, bulghur and cauliflower). But whichever end of the spectrum you lean toward, James's soups will always meet you halfway. If that comes as a surprise, so will the relative lack of pretension surrounding every meal---especially at the community table, where James serves up a three-course family-style meal once a week, each inspired by a different theme.
